The K1 made a lot of changes to the regular Klipper firmware, so it's possible they might require some kind of different changes. I would recommend opening a topic in the troubleshooting sub-forum and posting more details about the behavior.

I know a lot of starting scripts do purge and cleaning routines for both extruders, so that's one reason many of the profiles will at least initially heat both of them together. It's somewhat normal in my experience that the first solid layer on top of the infill isn't perfectly smooth. That's part of why you print multiple top solid layers, to allow those defects to smooth out. You could always try decreasing the solid infill speed, or potentially try higher infill percent...

In V5 you can still change the infill angle, but you can't create arbitrary sequences in a single process like V4. I don't think you can typically change the extrusion width for the top layers alone, since it uses the same width as the perimeters by default. You might want to look at the ironing features, since they might help you get some of the top level surface finish you are looking for.
