Is there no other solution to my graphical issues? or are my options to either buy a new Computer and hope it works or simply not use the new version of S3D?

The picture you posted looks like it's from the first layer. Do what andrew suggested and print a simple cube with 4 perimeters, 0% infill and 0 top solid layers. Then take a picture of layer #20 or higher. That's a better way to check underextrusion. If it's just the first layer that's wrong, then...

Does anyone have any suggestions for this? The same settings in Cura prints perfectly... it seems that it's just stuff coming out of Simplify3D that is under extruding... it's like it's ignoring the multiplier settings, even cranking it up to 300% produces the same result; as if nothing had changed.
