Update - that sort of worked. Just haven't been able to print anything consistently, extruders clogging halfway through prints. Time to poke and hope bit.

Thank you for posting this - sorry you didn't get any replies to it, but I just bought the Max and tried with Simplify3D for the first time using the Pro profile just as you did, and got the same behavior
