From what I understand the limiting factor of speed isn't how quickly plastic can be pushed through the nozzle it's how quickly the nozzle can be moved by the steppers without causing problems due to inertia.

I find it much easier to break a model up into multiple pieces that don't require supports and glue them together afterwards than to try to clean up a massive amount of support material. supports are generated on a grid, and with thin objects the angle it lays across that grid affects the support distribution. A smaller support resolution will help.

The easiest method is to press ctrl-L and chose a face on the model that you want to be flat on the build platform.
