That's not really very useful, given that the time estimates are so wildly inaccurate. The main reason for that, is that S3D can't properly estimate the real speed of the printer. That depends on the firmware and the firmware settings, which are unknowns to S3D.

You are correct that there is no support underneath the bridge, hence it needs to bridge... :-) However, there are two long walls (as the pictures shows), and bridging between these will work nicely, provided the bridging happens in the short direction. Lengthwise bridging is clearly illogical here....

I second this. The max volumetric flow of an extruder is more or less a constant, and having such a setting as a hard limit that cannot be exceeded will simplify things a lot, and skipped steps will be more or less a thing of the past. Yes, you can use multiple processes in a single print, and assign them to specific layer ranges.

I guess if you put M116 (before G28) in the starting script, and also uncheck the "Wait for temperature..." for both bed and extruder under the temperature tab, you should get what you want.
