I just discovered that I can change the feed rate by twiddling the knob on the printers control panel. This resolves ther issue when I'm watching the printer, however swhould I be scripting this in the configuration?

As far as I know, S3D doesn't support triple extruders.

Tools Menu : Firmware Configuration : Macros Tab

Although the macro commands are saved, the Macro Name is not. They aren't saved, and on the machine control panel they are shown as Macro 1, Macro 2 and Macro 3.

This appears to be the case regardless of which machine type is selected.
