Infill tab, set the "Print sparse infill every ___ layers" to a value of 2 or 3. For example, if you set the value to 3 and you were using a 0.1mm layer height, then the infill would be printed once every 3 layers and would be 0.3mm thick.
Hmm… I'm not seeing this at all. Are you sure you didn't add a layer change script? If I use one of the dual extruder profiles in the software and I add a toolchange script, that script is only included when switching between tools. That's exactly what it's supposed to do, and it doesn't happen ever...
