Simplify3D is written in Qt. The profiles are stored in QSettings (http://doc.qt.io/qt-4.8/qsettings.html). On my Linux machine, they're in the QSettings default location in $HOME/.config/Simplify3D/S3D-Software.conf. You can gather the orginization and application names from that path. If you want to save the profiles to the disk, just go to File > Export FFF Profile. Then you can put them anywhere you want for safe keeping.

And just so you know, if you export the FFF profile, it also makes it very clear exactly what settings change for High/Medium/Fast quality. Just look at the bottom in the <autoConfigureQuality> sections. It is spelled out very clearly. Just a tip in case anyone didn't know that!
