Is it possible to set some parts of the print to 0.2mm and some at 0.1 mm res?

I'm thinking 0.3 or 0.2 for the sides and 0.2 for the upper facing levels?

Yes, you can use multiple processes in a single print, and assign them to specific layer ranges.
