The processes are there to say how you are going to build the parts on the build platform. I have a feeling it's not acting 100% intuitive for you because you aren't really using the software exactly how it's meant to be used. In your case, it sounds like you really have 2 separate
profiles, a quick one and a high quality one. So use the new S3D profile system to save those as two separate entries in the drop down menu (this video explains it:

Then you can use the processes how they are intended. If you only plan to use one process for the print, you really should only have one process in the list.
I know everyone has their own preferences on how to do things, but I have a feeling that following the recommended S3D approach will make things much easier in the long run, since that's obviously how the software was written
