V5 Manual Support Issue

When I add a manual support, it sticks "on". That is, no matter what icon I select afterward, there is a support next to the mouse that is awaiting to be placed.

You probably just need to turn off the "Add Individual Supports" mode. It stays on once you select it until you turn it off. Most people add several supports at once, so this is usually preferred instead of having to click the button between adding each pillar.
