Bug: Machine size in options
In machine settings I change the size of my build area to be 180x180X120. This will remain in effect for between 10 seconds and a few minutes before something triggers it to reset.

In the process settings on the G-code tab there is an option to update machine definitions. If there is a check mark in the box, your settings will be changed back to whatever is set there. This might be the problem you are seeing.
