On Machine Control Panel / Accessories Controls, The Set temperatures doesn't correspond to actual temperatures, in the include pic, my set temperature is nozzle 240, Bed 80 it's not displaying that information correctly.

The number on the left is the current temperature that the machine is reporting. The number on the right is the target temperature. They will frequently be different while the temperatures are rising or falling.
I believe the red dot on the far left just lights up once the temperature starts to get hot enough it would be dangerous to touch. So that should change based on the left number.

The target temperature is not what i have set in the slicer!!! That’s the issue, it might correspond it might not, but the thermistors raise as they should according to the slicer settings.

Those values don't change based on your process settings. They are just for manual control. You can enter whatever value you want. Typically I believe people use that for preheating or turning off the heaters when the machine is not in use.
In other words, your slicer settings determine the temperatures that are used during the print. The set point values in the Machine Control Panel are just the manual values you want to use when performing maintenance (changing filament, etc).

Version 4.1.2 Starts with ZERO Set Point
Version 5 Starts with a 200 Nozzle, 60 Bed (I did not set that!!!!!)
It Doesn't Change until the nozzle or bed is almost operating Temperatures

Oh, I think the issue is just that the actual input (the one you can type numbers into) is on the right instead of the left. Both V4 and V5 in your screenshots are both reporting the machine temperature as zero degrees.
