Would be nice to have a built in print test where you could alter the Z offset on the fly dynamically, currently have to set it print something, cancel it change the Z offset, print, cancel, modify Z offset, print etc.

You can basically do that right now by clicking Edit Process Settings > Output tab, and changing the global Z-axis offset. After making that change just slice and start the print. If the nozzle was too far from the bed, repeat the process but decrease the Z-axis offset by another -0.05mm.
I use this frequently to dial in the exact Z-axis offset needed for a certain machine.
