Now that I have gotten the printer profile from Simplify (thanks) I am comparing the difference between the 2 slicers with the same model and filament.

Each have areas where one is better than the other, both using the stock settings.
The overhangs are much better on the model where I used Simplify (Model on the right).

I'm wondering which settings control this feature as I'd like to figure out why the Orca sliced model looks so bad.

Did you print both patterns at the same temperature?
S3D has always been good at overhangs.
In many other areas, however, they are far behind the competition.
