Noob question but- tell me about Z-offset

Can I just set my M2's mechanical axis endstop to "0" with the nozzle touching the bed glass (while the glass and nozzle are hot), then use the "z offset" to control where the first layer starts printing?
Is this the proper use of the Z-axis offset?

I have always manually adjusted my mechanical endstop until I get good first layer adhesion, but it seems that changing in software would be easier.

I use the z offset for the scenario you are describing and it works fine so I guess the answer is yes, you can.
